To the Power behind the Universe

I keep coming back to gratitude. Whenever I feel overwhelmed or scattered or just down, I am finding this daily habit of gratitude to work wonders. Seriously, I mean miracles.

Todays gratitude List includes a recipe ; ) I'll be sure to take a pic next time and post it here...

So, Thank you:

Thank you that I live in my own world of peace - and when it doesn't feel peaceful, thank you for the space to breathe and centre and find the truth again.

Thank you for the delicious raw butternut soup recipe: (it popped into my head straight from the Your (God's) Recipe book) Which means I went into auto-pilot and just watched my hands do the preparation and was blown away by the delicious result....

Here it is for anyone else who'd like a soup that doesn't leave you with heart-burn or feeling bloated and tired.

FRESH BUTTERNUT SOUP:

2 cups of fresh uncooked butternut ( the darker the orange colour - the sweeter it is)

2 Tblspns olive oil

3 Tblspns coconut milk

1 cup chopped dhanya leaves (coriander/cilantro - same thing)

cayenne pepper to taste

1 cm of ginger root

1 garlic clove

2 cups very hot water

salt

2 tspns lemon juice

1/2 a ripe avo

1/2 small yellow pepper

Put all ingredients into a high speed blender. After blending till really creamy - add more salt to taste.

Garnish with dhanya leaves and a swirl of coconut milk.

If you desire a more savoury depth to the flavour, add a Tblspn of Soya sauce or wheat free Tamari sauce.

TOTALLY DIVINE.
